Anyone know any stores in Rio de Janeiro that sell traditional fermented foods?
Specifically fermented foods that still have live cultures, i.e., unpasteurized.
So, kiefer, sauerkraut and Kim chi would be that basic types.
Local Brazilian traditional versions of fermented foods would be even better. But, if those no longer exist in Brazil, then do you know of any good import store with Japanese versions like Natto soybeans, or Persian versions like Kashk cheese, or Egyptian Shanklish cheese made by fermenting Areesh cheese, etc?
So far I have found a Japanese store called Casa Vitana that sells Natto but that's it. Anyone know of other places that sell fermented foods, or maybe even starter cultures and the specialized home cookware that it takes to make it yourself? Things like German fermentation crocks?
