Recently moved to Manhattan from Ann Arbor, Michigan: Best roaster in Ann Arbor is [Roos Roast](https://www.roosroast.com/) by a long shot! I am still looking for the best roaster in NYC... so far I have enjoyed [For Five](http://forfivecoffee.com/home/). (I love that I can pick up locally roasted Stumptown and La Colombe, however.)

Monmouth County NJ Rook Coffee Roasters. Has quite a few shops around the county. (Recommend the New Orleans) Booskerdoo Coffee. The Black and Tan roast makes the best cold brew.

Two cities near me. Columbus, OH and Celina, OH (USA) For Columbus, it's Staufs (LOVE their Monsoon Malibar, great peanut aroma). For Celina it's Old Hatch (or Hazelnut Coffee Co.) and their Moka Java post roast blend is excellent.

Richmond Virginia reporting in. Blanchard’s and Ironclad are our gold standards, and while I’ve heard good things about Rostov’s I haven’t tried them myself.
Blanchard’s does really great (and free!) brew classes one or two times a month. Not only are you getting a free, delicious cup of coffee or two, but it’s a great place to learn, ask questions, refine your own technique, and meet other people who are passionate about coffee. They don’t have a shop yet, so that’s a bit of a downside, but you can find them all over town in other cafes.
Ironclad are newer and aren’t as much of an institution as Blanchard’s, but they have a cafe, and are putting out some really high quality stuff. Best espresso in town if you ask me.
As for good shops, I’m not the best RVA resource because I mostly brew at home, but I highly recommend Ironclad, but they only brew their own stuff, and I have had good things at Alchemy, and they highlight local roasters as well as roasters from across the country. People will tell you try Lamplighter’s and/or Sefton. To each their own, but my experiences there have not been worth the opportunity costs of NOT going to Ironclad or Alchemy.

Houston, TX here and I personally think Amaya is the best in town. There are 2 I haven't tried yet but I feel like Amaya is consistently the best of the ones I've tried (Boomtown, Greenway, Xela/713, Cleo, Java Pura) For right down the road, Flat Track in Austin is my winner.
