The Primo Sports Center in Florida, NY (10 mins from Goshen) has open play from 11-3 pm Tuesday-Friday. $10 per family. Bounce houses, basketballs, scooters, tunnels, soccer, parachutes...all indoors. Also has a room to eat lunch if you pick up sandwiches down the road at Central Deli. https://www.primosports.net

I have 2.5 and 5 year olds and we take trips on the train out of Campbell Hall all the time. Kids love trains! The station at Campbell Hall is 10 minutes north of Goshen. Check the schedule for the Port Jervis line from njtransit.com. If you take the train east/south towards Harriman you'll cross the highest train trestle east of the Mississippi, the Moodna Viaduct, https://en.m.wikipedia.org/wiki/Moodna_Viaduct 30 minute ride each way through very pretty country. Costs $4.50 per adult, kids are free. Only bad thing during the winter is that the return train isn't for an hour, so you'd have to hang in the parking lot at Harriman and wait, or have someone pick you up.
Looking for a restaurant with vegetarian options beyond a salad. Preferably a nicer/ fancier atmosphere as this is to celebrate a birthday.

Check out End Cut in New Paltz; as you can tell by the name they’re pretty meat oriented but I believe they always have a ravioli option (fresh/homemade) and their mushroom cake (like crab cake without the crab) appetizer with avacado red pepper sauce is divine!
Super Nacho (aka Jimmy Changas) in Goshen. If you want eat in/sit down then Tulcingo, Monroe. Both are very authentic Mexican food. Soft tacos, white cheese. Not Tex-Mex.
