Can’t think of many off the top of my head in Boston proper, but in Cambridge...Craigie on Main, Alden and Harlow, and Oleana can easily modify lots of dishes (very good with allergies and dietary restrictions). For Somerville I haven’t been but True Bistro seems like a good suggestion from a fellow redditor. Also in that area is Sarma, really delicious food and a huge vegetarian menu that I’m sure could easily be made vegan. If you want a tasting menu or special occasion, most high end / $$$$ places can accommodate as long as you tell them when you make the reservation (L Espalier, Menton, Bistro du Midi, Asta).
