  Looks like some easy fixes. I'm sure a place like Ground Zero Performance would have some glass sunroofs. The quarter window will be a little more tricky and spendy to fix. A glass shop may have to handle that one.   The 3000 gt tank should be the same for the Stealth. There's a guy in Brooklyn, MI that sells used parts for these cars. He probably can get you a tank with the sending unit installed. His name is Josh and his website is www.dodgestealthsupply.com or www.3000 gtsupply.com. Unfortunately though, you may have trouble with trying to ship a used gas tank due to environmental issues.
