Anyone with any recommendations for sights/restaurants/cafe's in Venice, Florence and Rome? Would be truly appreciated x

When in Rome... well, besides all that; a really excellent way to see the Vatican and the Colosseum/Palatine Hill (and skip the huge lines) is to hire a tour guide from these guys: http://italywithus.com/ We really liked them, and they typically use University lecturers, so they know their stuff. Aaaand, to get your gelato fix on, here's the excellent places in Rome: Giolitti (Via degli Uffici del Vicario, 40), Old Bridge (right outside the Vatican walls: Viale Bastioni di Michelangelo, 5), and my personal fave: Gelarmony (Via Marcantonio Colonna 34)
Anybody ever do a private tour of the Vatican? Any recommendations?? Advice??
