I loooove Su Xing House at 1508 Sansom.

V Street in Rittenhouse is my absolute favorite--try the dan dan noodles and the bbq mushrooms with the sweet potato salad. I'll second Hip City Veg. I'm an omnivore but love it.
Mad Mex makes great tofu tacos and veggie fajitas. El Canino Real has great seitan wings. Vedge is the best meal you'll have in your life. Royal Tavern and the POPE also have great options.:)
