Courtney at John Joseph. I also had long hair (thick too) and she helped me shorten it with cute layers. Great price too! Lower than most places I've been to.

My sister does hair and she is very talented. She rents a booth in Elk River at JCSTYLES hair salon. It's in the small mall next to McDonald's. Her name is Tonya Berndt. I'm not totally sure about exact prices, but check out their website. She is very reasonable.
