Check with https://www.facebook.com/137027056014 Park West Dental Care - I am not sure if you would be able to shadow, but they partner with Assist To Succeed for Dental assistant schooling and have an open house every few months. I know it's for a dental assistant and not a hygienist but they may be able to point you in the right direction if nothing else

North Fork Dental, by Taylor's Chevrolet in Rexburg, they told me I could shadow if I called and asked, so just give them a call and I'm sure they can get you in there to shadow:)
